Egg Fried Rice (Quick Version)

Ingredients

  • 1 cup cooked rice (cold or leftover)
  • 2 eggs
  • 1 tbsp soy sauce
  • 1 tbsp oil
  • Optional: chopped green onions or frozen peas

Steps

  1. Heat oil in a pan, crack in the eggs, and scramble.
  2. Add rice and stir-fry for 2–3 mins.
  3. Add soy sauce and mix well. Toss in any extras if using. Done!
