Chickpea Salad

Ingredients

  • 1 can chickpeas (drained)
  • 1 small cucumber (chopped)
  • 1 tomato (chopped)
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • Salt & pepper
  • Optional: feta or parsley

Steps

  1. Mix chickpeas, cucumber, and tomato in a bowl.
  2. Add olive oil, lemon juice, salt, and pepper.
  3. Toss well. Top with feta or parsley if desired.
