
Ingredients
- 1 can chickpeas (drained)
- 1 small cucumber (chopped)
- 1 tomato (chopped)
- 2 tbsp olive oil
- Juice of 1 lemon
- Salt & pepper
- Optional: feta or parsley
Steps
- Mix chickpeas, cucumber, and tomato in a bowl.
- Add olive oil, lemon juice, salt, and pepper.
- Toss well. Top with feta or parsley if desired.
